One of the most remarkable properties of authentic Bilona ghee is its natural stability. Because the slow-boiling process removes all moisture and milk solids, ghee is essentially pure butterfat. Without water, bacteria and mold cannot easily survive.
However, to preserve the delicate nutty aroma, essential vitamins, and golden color of your SudhStore ghee, proper storage is vital.
1. Keep Moisture Out
Moisture is the single biggest enemy of ghee. Always use a completely dry, clean spoon when serving. Even a single drop of water from a wet spoon can introduce microbial growth over time.
2. Store in Glass or Ceramic
We package our ghee in premium glass jars for a reason. Plastic containers can leach chemicals into the fat over time, altering the taste and purity. Keep your ghee in its original glass jar or transfer it to a traditional ceramic pot (martaban).
3. Avoid Direct Sunlight
UV light causes fats to oxidize rapidly, leading to rancidity. Store your ghee in a cool, dark kitchen cabinet away from the stove's direct heat and sunlight.
4. Do Not Refrigerate
Unlike standard butter, Bilona ghee does not need to be kept in the fridge. Refrigeration causes condensation inside the jar when brought back to room temperature, which introduces moisture. Keep it at room temperature.
If stored correctly, pure Bilona ghee can easily last for up to 12 months, developing an even richer aroma as it matures.
